Since arriving in Australia from Italy in 1996, he has worked in many fine restaurants throughout Perth, introducing and experimenting with a classic collection of recipes from “La Cucina D’Oro” / “The Golden Kitchen”. A grand culinary work that has the seal of approval from: The Academy of Cooking, National Institution of Nourishment as well as the Italian Federation of Chefs. (The highest organizations in the Italian Gastronomic Sector).
In 2001 he opened Antico Caffe with his brother, allowing Tino to strengthen his reputation as an outstanding Chef with a passion for Italian Food, and who understands the ingredients he works with and the flavours they produce.
With such a strong respect for Italian Tradition and appreciation for seasonal ingredients Chef Tino prepares “Italian Dishes” with a contemporary twist.
European trained he has worked in some of the top Kitchens in Europe as well as throughout Australia during his 30 years cooking. His true flair and creativity with experience in many styles of cuisine is evident from your first talk with him about menu options.
Not only is Chef Peter well known for creating innovative cuisine using Australian Bush Food ingredients, he has a reputation for preparing “Classic” dishes with the same passion.His love of food has seen him attend many Culinary Cooking competitions, both in Australia and overseas. In 2008 as Logistics Manager for the Australian Culinary Federation Junior and in 2010 for both Junior & Senior Teams. (The teams are the most awarded Australian Culinary Teams to date.)
